The machine is used for chopping, emulsifying, mixing, and grinding meat under vacuum conditions. The vacuum technology allows for deep foaming and emulsification of the filling without air bubbles, which results in a perfect structure, better binding of water and fat, extended shelf life, and optimal color in cooked, raw, pâté-style, and frankfurter-style sausages. The heart of the machine is a stable, massive 200-liter stainless steel bowl connected to a precise knife head. The integrated hydraulic loading lift, adapted for standard 200-liter meat carts, facilitates and speeds up the loading process, and the hydraulic filling unloader allows for quick and complete emptying of the chamber after the cutting cycle. The entire system is controlled from a separate, free-standing control cabinet made entirely of stainless steel.
