MECALSA continuous industrial fryer with a thermal oil heating system, designed for the continuous frying of food products in medium and high-capacity production lines.

The equipment features a longitudinal process tank and a transport system that allows the product to remain in the oil for a controlled residence time. Indirect heating via a thermal oil circuit provides the necessary energy to the process while keeping the thermal fluid separate from the frying oil.

PROCESS

The product is continuously fed into the MECALSA fryer and guided through the frying zone by the internal transport system.

During this process, the product remains in contact with the frying oil at a controlled temperature for the time needed to achieve the required final characteristics of cooking, color, and texture.

Heat is supplied through a thermal oil circuit, which transfers energy to the system without directly mixing with the oil used for frying the product.

The vapors generated during frying are collected by the hoods and channeled to the extraction system.
